Pablo’s has such a cozy and inviting ambiance—perfect for a relaxed night out. Their mocktails were amazing (crafted with so much flavor and creativity), and the highlight for us was jazz night. The set was absolutely incredible and had such a great vibe, we honestly wished we could have stayed longer. Definitely a spot worth coming back to!

We had such a fantastic night at Pablo's! We went on a Saturday and the place was absolutely buzzing, with a brilliant live jazz band setting the perfect atmosphere. The staff were friendly, attentive, and really added to the experience. Cocktails were spot on—beautifully made and delicious. A vibrant spot for a night out in Hobart. Can’t wait to come back!

Whilst in town, my partner and I popped in for a nightcap cocktail and perhaps a dream or two. Was still early and a cool jazz band was just setting up. Bar staff very knowledgeable on their drinks and we had a bit of a chat about the cocktail menu. The atmosphere was a bit tight inside but very cool. There was an area outside that had extra seating but we did not stay out there long. We couldn't stay for too many but enjoyed ourselves and will definitely come back. Worth checking out
